The physico-chemical characteristics of the fruits of native species of the
Atlantic Forest are little known, especially during their ripening. The
objective of this work was to evaluate the effect of the interaction between
the maturation process and the post-harvest storage on the fruits of
araçaúna and grumixama. The fruits were harvested at three stages of
maturation, according to the color of the epicarp, and separated into two
lots, which were stored for 2 and 48 hours after harvest. Were evaluated:
longitudinal (DL) and transverse (DT) diameter of fruits, DL / DT ratio,
fresh fruit mass (MF), pulp yield (REND), pH, soluble solids content (SS),
titratable acidity (AT), ratio (SS / AT) and ascorbic acid content (AA).
The araçaúna fruits stand out for having, on average, high yield (74.43%),
with low SS (2.07 ºBrix) and high AT (1.17% citric acid). However,
harvesting fully ripe fruits increases SS by 21% and reduces TA by 32.5%.
The grumixama fruits, on the other hand, are slightly sweet (6.06 ºBrix),
with low acidity (0.39% citric acid), rich in vitamin C (206.94 mg of
ascorbic acid/100g of pulp), and their harvest must be done when the fruits
are fully ripe.
